bread-banana coconut loaf

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sweetened flaked coconut
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher or coarse salt
  • 1/2 cup chopped walnuts
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup butter, melted
  • a cup very ripe bananas, mashed( about 3 medium)
  • 1/2 tsp almond extract

Preparation

Step 1

preheat oven to 350. grease a 9 x 5 x 3 inch loaf pan, set aside.

in large bowl combine flour, coconut, baking powder, baking soda and walnuts, set aside

in another large mixing bowl beat eggs until light and frothy. add sugar and melted butter, mixing well. stir in mashed bananas and almond extract.

add the flour mixture to the banana mixture and stir just to combine. do not overmix.

spoon into prepared pan and bake for 1 hour.
