ORANGE BEEF IN VEGETABLE NESTS

Ingredients

  • 1 lb. boneless sirloin steak
  • 1 red pepper
  • `1/2 lb. snow peas
  • `2 tablespoons peanut oil, divided
  • 2 tablespoons cornstarch, divided
  • 1/3 cup orange juice
  • 2 tablespoons each orange marmalade and lite soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 can sliced water chestnuts

Preparation

Step 1

Cut beef into thin strips across grain. Cut pepper into strips. Trim snow peas. Bring 1/2 cup water to boil in large nonstick skillet. Add pepper and snow peas. Cover and steam 3 minutes until crisp-tender. Drain and place on platter, keep warm. In same skillet, over high heat, warm 1 tablespoon oil until hot. In small bowl toss one half beef with 1 tablespoon cornstarch. Cook in remaining oil. In bowl, combine orange juice, marmalade, soy sauce and rice wine vinegar. Add to skillet with water chestnuts and beef. Bring to boil, reduce heat and simmer 1 minute. Place on vegetables to serve.
