Ingredients
- 4 hard boiled eggs
- 3 tablespoons mayonnaise
- 1 teaspoon yellow mustard
- 1 teaspoon sweet or dill pickle relish
- Salt and Pepper to taste
- 4 slices favorite bread, toasted
- 4 slices cooked bacon
- Romaine lettuce

Preparation
Step 1
In a medium bowl, add egg whites and yolks with fork till medium crumbles form. With a spoon stir in 2 tablespoons of mayo, the mustard, the relish till creamy. Add salt and pepper to taste.
Toast the bread and spread with the remaining tablespoon of mayo. Scoop egg salald evenly onto 2 slices of bread. Top with bacon and remaining 2 slices of toast. Add romaine lettuce for a touch of green.
