Delicious thick crumbed coffee cake muffin. Adapted from epicurious.

Ingredients
- Cake:
- 1 cup flour
- 1/2 cup sugar
- 1 3/4 tsp baking powder
- 3/4 stick butter, melted
- pinch salt
- 1/2 cup milk
- 1 large egg, room temp
- Crubles:
- 3/4 stick butter, melted
- 1/4 cup dark brown sugar
- 1/4 cup white sugar
- 3/4 teaspoon cinnamon
- 1 cup plus 1 tablespoon flour
- Cinnamon sugar
Preparation
Step 1
Cake: Preheat oven to 350. Put paper liners in 11 muffin cups. Whisk together the flour, baking powder, sugar, and salt. Whisk together the butter, milk,and egg in a large bowl. When combined whisk in flour mixture until just combined. May be lumpy. Pour 2/3- 1/2 cup full.
Crumbles:
Whisk together the butter, sugars,and cinnamon until smooth. Stir in flouur with whisk, then stir through with a butter knife to createcrumbles. Add more flour as needed to get a crumbly texture. It will dry out in oven.
Sprinkle on top of muffins.. really load them up. Sprinkle Cinnamon sugar over top.
