Slow Cooker Veggie Stew

Ingredients

  • 1 tbsp vegetable oil
  • 2/3 cup carrot slices
  • 1/2 cup diced onion
  • 2 cloves garlic, chopped
  • 2 cans (14 oz) vegetable broth
  • 1 1/2 cups chopped green cabbage
  • 1/2 cup cut green beans
  • 1/2 cup diced zucchini
  • 1 tbsp tomato paste
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp salt

1. Heat oil in medium skillet over medium-high heat. Add carrot, onion and garlic. Cook and stir until tender.

2. Place carrot mixture and remaining ingredients in slow cooker; stir to combine. Cover; cook on LOW 8 to 10 hours on on HIGH 4 to 5 hours.
