Ingredients
- Base:
- 1 cup flour
- 1/4 cup white sugar
- 1/2 cup margarine
- Topping:
- 2 tsp. grated lemon rind
- 1/4 cup lemon juice
- 2 tbsp. melted butter
- 2 eggs, beaten
- 1 cup medium coconut
- 2/3 cup white sugar
- 2 tbsp. flour
- 1/2 tsp. baking powder
- 1/2 tsp. vanilla
- pinch salt
Preparation
Step 1
Mix together base ingredients and press into 9 x 9 pan. Bake 350 degree oven for 15 minutes.
Mix lemon juice, rind, butter and eggs. Blend in coconut, sugar, flour, baking powder, vanilla and salt. Pour over base.
Bake 350 degrees for 30 minutes.
Cool and cut into squares.
