Stew - Brunswick Stew

Ingredients

  • 2 cups new potatoes, coarsely chopped
  • 2 cups of frozen lima beans, thawed
  • 2 cups frozen corn, thawed
  • 2 cups frozen okra, thawed
  • 1 onion, chopped
  • 3 lbs. boneless beef roast, trimmed
  • 1 (28 oz) can crushed tomatoes
  • 1 (28 oz) bottle barbecue sauce
  • 1 1/2 cups beef broth
  • Cornbread, optional

Preparation

Step 1

In a 4 qt. slow cooker, combine potatoes, beans, corn, okra and onion. Place roast on vegetales. Pour tomatoes, barbecue sauce and beef broth over roast. Cover and cook on high 1 hour.

Reduce heat to low and cook 8 hours.

Using 2 forks, shred meat intol bite-size pieces. Serve with cornbread if desired.
