Ingredients

  • 2 lbs of ground chicken or turkey
  • 1/2 tsp of paprika
  • 1/4 tsp of cayenne
  • 1/2 tsp of ground ginger
  • 1/2 tsp of allspice
  • 1 tsp of cumin
  • 1 tsp hot curry powder
  • tbsp minced garlic
  • 1 cup chopped red bell pepper
  • 1 cup chopped Spanish onion
  • 1 tbsp of oil
  • salt and pepper to taste

Step 1

Heat a sautee pan to medium high and add the oil. Once the oil get hot add the onion and bell pepper, stir and cook till the onions become translucent. Now add the garlic and all the seasonings and cook while stirring for about a minute. Remove from heat and set aside to cool. – In a large mixing bowl mix the chicken or turkey along with the onion and red pepper mixture together. Form this mixture into 6 patties and set aside. – If cooking these on an outdoor grill heat the grill to high and spray the grill with cooking spray. Spray the patties with cooking spray and lay them on the hottest part of the grill. Cook these on both sides so that they get nice grill marks. Now finish cooking these with indirect heat with the grill cover closed. Check one burger by splitting it open to see that it is no longer pink or use an instant read thermometer it should read 160 degrees Fahrenheit. – If cooking indoors sear the patties on both sides in an oven proof pan and finish cooking in a preheated 350 degree Fahrenheit oven for 10 to 15 minutes. Serve these on your favorite bun along with sliced onion, tomato, and leaves of lettuce.
