Apricot and Golden Raisin Cake

Ingredients

  • 2 cups water
  • 1 cup golden raisins
  • 1 cup dry apricots, cut up
  • 8 ounce cream cheese
  • 1 cup butter [margarine]
  • 1 cup sugar
  • 1 1/2 teaspoon vanilla
  • 4 eggs
  • 1 1/2 teaspoon baking powder
  • 2 1/4 cups flour

Preparation

Step 1

Place water, raisins, apricots in saucepan.
Bring to a boil. Simmer 20 - 30 minutes.
[Leave overnight. Liquid will be absorbed.]

Cream: cream cheese, butter, sugar, vanilla and eggs.

Add baking powder and flour.

Stir in cooled fruit.

Pour into greased tube pan.

Bake 325 degrees 1 1/2 hours
