Hoppin' John

I got a Hoppin' John recipe from a viewer who swears that you have to use leftover holiday ham in it. Since I tried this when I didn't have any leftovers, I replaced the ham with turkey sausage and ended up with quite a satisfying dish. Try it either way. Mr. Food

Ingredients
- 1 pound diced ham
- 5 medium carrots, peeled and diced
- 1 medium onion, chopped
- 1 medium red bell pepper, chopped
- 2 cloves garlic, chopped
- 5 1/4 cups chicken broth
- 2 (15 1/2 -oz) cans black-eyed peas, drained and rinsed
- 3/4 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper
- 3 cups instant rice, white or brown
Preparation
Step 1
1. Spray a large soup pot
2. Add carrots, onion, bell pepper and garlic
3. Cook over medium-high heat for 7-8 minutes.
Remove from heat
4. Add broth, ham, peas, rosemary, thyme and cayenne
pepper.
5. Bring to a boil, cover and reduce heat to low
6. Simmer 5-6 minutes, or until the carrots are tender
7. Add the rice; increase the heat to medium-high;
return to a boil
8. Cover and remove form heat
Let stand for 5 minutes before serving
