French coconut pie

Ingredients

  • 1 1/2 cups sugar
  • 1 tbsp. all purpose flour
  • 1/2 cup(1 stick) butter,melted
  • 3 large eggs
  • 1/2 cup buttermilk,well shaken
  • 1 tsp. vanilla extract
  • 2 cups grated coconut,fesh or frozen
  • 1 deep dish unbaked 9 in pie shell

Preparation

Step 1

Heat oven to 350

-In bowl beat together sugar anf flour with the melted butter
-Add the eggs one at a time,mixing well after each
-Add buttermilk and vanilla and combine again
-Stir in the coconut
-Pour the filling into the prepared pie shell
-Bake 45-50 min or until lightly brown and the center of the pie should come out moist but not covered with custard
-The coconut will rise to form a top crust during bakin
-Set the pie in the pan on a wire rack and cool completely before serving
