CORN RELISH

Ingredients

  • 4 cups fresh corn (9 ears)
  • 3 cups seeded diced red tomatoes
  • 1-1/2 cups green pepper
  • 1/4 cup red pepper
  • 1 cup chopped onions
  • 1/2 cup sugar
  • 2 cups cider vinegar
  • 1 tablespoon pickling salt
  • 2 teaspoons yellow mustard

Preparation

Step 1

Combine all ingredients in nonreactive pot. Bring to a boil, and reduce heat. Simmer for 20 minutes. Ladle relish into pint jars leaving 1/2” headspace. Close jars with hot two piece caps. Process jars for 15 minutes in boiling water bath. Store cooled jars in a cool dark place.
