Tres Leches Cake

Ingredients
- Non-stick spray
- 6 large eggs
- 1 cup sugar
- 1/8 tsp salt
- 1 cup flour
- Finely grated zest of 2 limes
- 2 cups whole milk
- 1/2 cup sweetened condensed milk
- 1 5-oz can evaporated milk
- 2 tsps vanilla extract
- Berries or cut fruit for garnish

Preparation
Step 1
Preheat oven to 350. Spray a 9X13 cake pan.
Using an electric mixer at high speed, whisk together eggs, sugar & salt until very light & fluffy, about 2 minutes. Fold in the flour and lime zest. Pour inot cake pan and bake until surface is pale golden, about 20-25 minutes. Remove from oven & set aside.
Place whole milk in small saucepan and heat just until steaming. Add condensed milk, evaporated milk and vanilla; mix well. Pour slowly and evenly over hot cake, allowing mixture to be absorbed as it is poured. Allow cake to come to room temperature, the cover & refrigerate for at least 2 hours.
To serve, allow cake to come to room temperature, cut into squares & garnish with berries.
