Ingredients

  • 6 egg whites
  • salt and pepper to taste
  • 3/4 cup mushrooms sliced
  • 2 tbsp green onion chopped
  • 1/2 cup Roma tomatoes, chopped
  • 1 1/2 oz shredded cheddar, low fat

Preparation

Step 1

Beat egg whites. Add salt and pepper to taste.

Add veggies to heated, greased skillet and saute until tender. Add egg mix and cook until set on top. Sprinkle Cheese over top and fold omelet in half. Cook a bit longer til cheese is melted and egg set.
