Filet Mignon with Rich Balsamic Glaze

Ingredients

  • 2 (4 ounce) filet mignon steaks
  • Preferred steak seasonings
  • 1/2 cup balsamic vinegar
  • 1/4 cup dry red wine
  • 1 Tbls Brown Sugar
  • 1 Clove Garlic

Preparation

Step 1

Let filets rest for an hour (helps keep the meat tender...if you apply heat to chilled meat it shocks it & causes it to toughen up) before salt & peppering them (used Paula Deen's house seasoning).

Heat an oven safe skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Place in heated over (Broil) to just short of preferred doneness (it will continue to cook sitting at rest). Let rest for 5 min to allow juices to distribute evenly.

In a separate pan and add balsamic vinegar, red wine, garlic and brown sugar. Bring to boil and reduce heat simmering for 10 min or until sauce reduces to desired consistency.

Place gorgonzola on top of steaks and place back into broiler to melt cheese slightly. Spoon glaze over each, and serve immediately.
