Brazilian Feijoada

If you can’t travel to São Paulo soon you should try to cook one of the most delicious dishes served at Vegacy:
Brazilian Feijoada. Usually it is served with white rice, cooked kale and farofa! (a dish made originally with
eggs and tapioca flour, which can easily be veganized and made with tapioca flour and onions
Ingredients
- 1/2 kg black beans
- 450 g vegan sausage
- 450 g smoked tofu
- 2 big beets, sliced into cubes
- 1 turnip
- 400 g pumpkin, sliced into cubes
- 100 g organic (GM free) TVP (the big one)
- 3 cloves
- 1 onion
- 3 bay leaves
- 2 pinches of salt
- black pepper (as you like it)
Preparation
Step 1
Cook the black beans in a pressure
cooker or let them soak in a regular
pan for one night and then cook
for one hour the next day (you also
could use canned beans if you have
no other option).
2. When the black beans are cooked,
add the beet, pumpkin, turnip, the
bay leaves, the TVP, salt and black
pepper and let it cook.
3. In another pan, fry the sausages and
smoked tofu with onion and garlic.
Let the bean mixture cook until the
vegetables are soft and you have the
desired texture.
4. Add the sausages and smoked tofu
(with the garlic and onion) in the
end.
5. Serve hot.
