Ingredients

  • 1 (12-oz) can refrigerated fluffy buttermilk biscuits
  • 1/4 cup butter
  • 1/3 cup all-purpose flour
  • 1 (10 1/2-oz) can chicken broth
  • 1 1/4 cups milk
  • 2 cups cubed cooked chicken
  • 1 cup frozen sweet peas
  • 1-2 cups fresh mushrooms, sliced and sautéed in a bit of olive oil until cooked
  • 1 (2-oz) jar diced pimientos, drained
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Step 1

Bake biscuits as directed on can.

Meanwhile, melt butter in a large saucepan over medium-low heat. Add flour; blend well. Add broth and milk. Cook, stirring constantly, until mixture boils and thickens.

Add chicken, peas, mushrooms, pimientos, salt and pepper; simmer 5 to 10 minutes or until thoroughly heated.

Split warm biscuits; place on serving plates. Spoon hot chicken mixture over biscuits.
