Ingredients
- 1 Tbsp. plus 1 tsp. olive oil
- 6 cloves garlic, minced or crushed through a press
- 3 cups low-sodium chicken broth
- 1 1/2 cups canned crushed tomatoes
- 1 cup sliced zucchini
- 1/2 cup thinly sliced carrots
- 1/2 cup thinly sliced celery
- 5 oz. potato, diced
- 3/4 oz. alphabet pasta
- 3/4 tsp. dried basil
- 3/4 tsp. oregano
- Parmesan cheese

Step 1
In a medium saucepan over medium-high heat, warm the oil until hot but not smoking. Add garlic and sauté for 1 minute, stirring constantly.
Add broth, tomatoes, zucchini, carrot, celery, potato, pasta, basil and oregano. Bring to a boil over medium-high heat. Cover and reduce heat to low. Simmer until pasta and vegetables are cooked through, approximately 20-30 minutes.
Serve with parmesan cheese
