Ingredients

  • 3 eggs
  • 1 c sugar
  • 2/3 c pumpkin
  • 1 tsp lemon juice
  • 3/4 c flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 c pecans chopped
  • powdered sugar

Preparation

Step 1

Preheat oven to 375*.

Grease and flour jelly roll pan.

Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Sift dry ingredients. Fold into pumpkin mixture. Spread into prepared pan and top with pecans. Bake for 15 minutes. While baking, dust kitchen towel generously with powdered sugar. When cake is done, immediately turn out onto towel and roll. Coll. Unroll and spread Cream Cheese Filling on cake. Reroll and refrigerate.
