Chicken Jambalaya

Ingredients

  • 3 cups long grain rice
  • 1 tablespoon celery (chopped small)
  • 1 large fryer
  • 1/2 pound hot smoked sausage, if desired
  • 6 medium size onions (chopped)
  • Salt
  • 1 clove garlic (finely chopped)
  • Black pepper
  • 1 Tbs bell pepper (chopped small)
  • Cayenne pepper
  • 1 cup cooking oil

Preparation

Step 1

1. Cut up chicken, wash and season with salt and both peppers. Fry until golden brown in cooking oil over hot fire. Lower heat and add all chopped seasoning except garlic. Cook all seasonings until clear or onions. bell pepper and celery are tender. Here's where you may add the hot sausage. I think this makes a better jambalaya. Add rice, salt and pepper to chicken and seasoning. Cook slowly for about 15 minutes over low heat, stirring often. Add 4 cups water and chopped garlic, stir and cover. Do not stir anymore. Simmer over low flame for about 1 hour, or until rice is done. Keep covered
