Ingredients

  • 4 eggs, well beaten
  • 2 cups cooked pumpkin or squash (1 can)
  • 1 cup oil
  • 2/3 cups water
  • 3 1/4 cups flour
  • 1 teaspoon cinnamon
  • 3 cups sugar
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 cup nuts (optional)

Step 1

Mix the eggs, pumpkin/squash, oil and water. Add the remaining ingredients. Pour into 2 loaf pans. Bake at 350 degrees for 1 hour.
