Ingredients
- 2 chicken breasts, sliced thin and pounded to an even thickness
- 1/2 cup flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. paprika
- 3 Tbsp. olive oil
- 10 oz. package button mushrooms, sliced
- 2-3 garlic cloves
- 1 cup white wine
- 2 Tbsp. chopped fresh parsley
- Juice of 1/2 lemon
- 2 Tbsp. capers (optional)
Preparation
Step 1
Dredge chicken in flour mixture and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, heat olive oil. Add chicken and cook for 3 minutes on each side, or until golden. Remove and transfer to plate.
If necessary, add a little more oil to the skillet and saute the mushrooms and whole garlic cloves until the mushrooms are soft and browned. Season with salt to taste.
Add chicken and capers, if using, to skillet and pour in wine. Simmer until wine has reduced by half, approximately 10 minutes.
Remove garlic cloves, stir in the parsley and squeeze the lemon juice over the top.
Place the chicken on a platter and pour the sauce over the top.
