Irish Kerry Cake

Ingredients
- 3 medium apples, pared and diced
- 1-1/2 cups flour, sifted
- 3/4 cup butter
- 1/2 cup sugar
- 3 eggs
- 1 tsp. vanilla
- Zest from one lemon
- 1/4 tsp. salt
- 1-1/2 tsp. baking powder
- 3 Tbsp. sugar
- 1 tsp. cinnamon
Preparation
Step 1
Preheat oven to 375°F.
In a small bowl, combine the sugar and cinnamon. Set aside.
In the bowl of a stand mixer, cream the butter and sugar. Add the eggs, one at a time, followed by the vanilla. Then, stir in the lemon rind.
In a separate bowl, combine the flour, salt, and baking powder. Incorporate the dry ingredients into the wet ingredients. Then, gently fold in the apples.
Pour the mixture into a greased loaf pan. Sprinkle the cinnamon-sugar topping on top and bake for 30 minutes.
Serve the cake warm and dollop each slice with vanilla ice cream or whipped cream.
