chocolate cups
these enchanting little cups of white or dark chocolate are just the right size for filling with a small dollop of mousse, sorbet or ice cream, or with a perfect whole strawberry. the cups are fragile, so handle them carefully. if some of the cups have gaps in the chocolate coating, rewarm some of the chocolate mixture and use a teaspoon to patch them. then rechill the cups to firm them.
Ingredients
- 3 squares ( 1oz each) semisweet or white chocolate
- 2 tsp vegetable shortening
- 12-18 miniature foil or paper cups, depending on size

Step 1
place chocolate and shortening in 2 cup microwave safe measure. microwave on high(100 percent) until chocolate is shiny(1-2 minutes for dark chocolate or 2-3 minutes for white chocolate) stirring every 30 seconds. stir until very smooth.
using miniature foil or paper cups, pour about 1 tsp of the melted chocolate into each foil or paper cup. tipping and turning the cup, use the back of a teaspoon to apply an even coating on bottom and sides of the inside of the cup. refrigerate cups until firm.( at least 2 hours) when cups are firm, remove one cup at a time from refrigerator. quickly peel off paper and return cup to refrigerator to firm. place finished cups in a single layer in an airtight container, refrigerate or freeze until needed(for up to 1 month in the refrigerator or in freezer for up to 6 months.) makes 16-18 cups
