Green Beans with Shallots, Bacon, and Mushrooms

Ingredients
- 2.5 lbs green beans
- 4 oz bacon, cut thin
- 1 large shallot, minced
- 8 oz mushrooms, trimmed and sliced thick
- salt and pepper

Preparation
Step 1
Trim the beans and cut into 1 inch pieces or in half. Blanch in boiling water for about 2 to 3 minutes. Shock the beans and reserve. In a skillet, saute the bacon until crisp/ Remove the bacon and place on paper towels. Saute the shallots in the bacon fat for about 30 seconds. Add the mushrooms and saute one minute. Add the green beans and cook until desired doneness. Season with salt and pepper and just before serving add the bacon back to the pan and toss. Check the seasonings to taste.
