Lamb: Lamb Shanks Beatrice

Ingredients

  • 4 slices bacon
  • lamb shanks
  • 1/2 cup parsley or less
  • 2 medium onions, chopped
  • 1 can stewed tomatoes
  • 1 T horseradish
  • 1/2 lb mushrooms - fresh
  • 1 cup red wine
  • 1 t worcestershire sauce
  • Salt, pepper and flour

Preparation

Step 1

Render bacon. Remove it. Four and brown lamb. Add all but mushrooms. Add bacon again. Simmer for 2 hours covered. Add mushrooms and cook for one and a half hours.

Serve with buttered noodles, cooked spinach, tossed salad and hard rolls. Good with Blueberry cobbler for dessert.
