Green Bean & Red Pepper Salad

Ingredients

  • Vinaigrette:
  • 1 LB (500g) thin green beans (fresh).
  • 1 sweet red pepper
  • 1 Red Onion thinly sliced
  • 1/3 cup (75 ml.) vegetable oil or olive oil
  • 3 tbsp. red wine vinegar (1 white,2 red ? ) (50ml.)
  • 1 clove garlic minced
  • 1 tsp. dried basil (5 ml.)
  • 2 tsp. dijon mustard (10 ml.)
  • 1/2 tsp. granulated sugar (2 ml.)
  • 1/2 tsp. salt

Preparation

Step 1

Trim ends off beans
Cook whole beans in boiling water fo 4 to 5 minutes or until tender & crisp.
Cool under cold water - drain well.
Cover & refrigerate.
Remove seeds from red pepper & cut in thin strips.
In jar with tight lid combine oil, vinegar, garlic, basil, mustard, sugar & salt.
Shake until blended.
Pour over pepper strips & toss.
Before serving add whole green beans & toss again.
Makes 4 - 6 servings.
