Ingredients
- 1 leg of American lamb, 5-6 lbs
- 3-4 cloves fresh garlic
- 1 t lemon pepper seasoning
- 1 can beef broth, reduced sodium
- 1/2 cup water
- 8 small carrots, peeled
- 1 large onion, peeled and quartered
- 6 large potatoes, peeled and quartered
Preparation
Step 1
Preheat oven to 350 degrees. Make small slits in leg of lamb. Cut the peeled garlic cloves into slices and place in the slits. Rub leg generously with lemon pepper seasonings.
Place lamb in roasting pan. Pour beef broth and water into roaster and add carrots and onions. Bake for 25-30 minutes per pound until medium rare or to desired doneness.
Remove lamb from roaster, cover and let rest for 20 minutes before carving. Skim any fat from juice in roaster. Serve remaining juice with lamb or thicken to make gravy. Serve with crisp green vegetables.
