Cake Mix Doctor Orange Rum Zum Cake

Ingredients

  • Glaze:
  • Vegetable spray for the pan
  • Flour to dust the pan
  • 1 (18.25 oz) plain yellow cake mix (I use orange)
  • 1 (3.4 oz) vanilla instant pudding mix
  • 1 cup orange juice
  • 8 tablespoon (1 stick) butter, melted
  • 1/4 cup dark rum
  • 4 large eggs
  • 1 tablespoon grated orange zest
  • 4 tablespoons(1/2 stick) butter
  • 1/2 cup sugar
  • 1/4 cup dark rum
  • 1/4 cup fresh orange juice

Preparation

Step 1

1. Preheat oven to 350.
2. Lightly spray a 12-cup bundt pan and dust with flour.
Shake out excess flour.
3. In a large bowl, combine the cake mix, pudding mix,
eggs, oil, orange juice, rum and orange zest.
4. Blend with an electric mixer on low speed for 1
minute. Scrape the sides of the bowl.
5. Increase mixer to medium and beat for 2 minutes
more. Batter should look thick and smooth.
6. Pour in pan.
7. Bake for 45-50 minutes or till cake springs back
when lightly pressed with your finger and just starts
to pull away from the sides of the pan
8. Place on wire rack to cool for 20 minutes.
9. Run a long knife along the edge of the cake and
invert on a serving plate.

Glaze:
1. Mix butter, sugar, rum and orange juice in a small
saucepan over medium heat.
2. Bring to a boil, stirring constantly, and cook 2
minutes.
3. Poke holes in the top of the cake with a wooden
skewer and spoon on warm glaze, letting the glaze
soak into the holes and drizzle down the sides and
into the center of the cake.
