Chicken Caesar Bowtie Salad

Ingredients

  • 2-3 large boneless skinless Chicken Breasts
  • 1 teaspoon Olive Oil
  • Lemon Pepper Seasoning
  • 1/2 lb Bowtie Noodles
  • 3 Hearts of Romaine Lettuce, washed and chopped
  • 1 Cucumber, diced
  • 1/2 cup shredded Parmesan Cheese
  • Caesar Croutons
  • Caesar Dressing (use your favorite brand)

Preparation

Step 1

Preheat oven to 375 degrees. Place chicken breasts on a foil-lined baking sheet. Drizzle olive oil over the chicken breasts. Season chicken with as much lemon pepper as you'd like. Bake for 25-30 minutes, or until chicken is cooked thoroughly. Let chicken rest for 5 minutes before cutting. Once rested, cut into one inch pieces.

While chicken is baking, boil the bowtie noodles in a large pot of water until tender, according to package directions. When done, drain water.

In a large bowl, add the chopped romaine lettuce, cucumber, parmesan cheese and croutons. Toss. Add in the bowtie noodles and diced, cooked chicken. Toss again. Divide salad evenly among plates and serve with caesar dressing. Enjoy!
