Rhubarb Cream Cheese Muffins

I can't find this recipe onlineor in any of my many recipe books. I may have adapted another recipe to come up with this one.

Ingredients
- Filling:
- 1 1/2 cups brown sugar
- 1/2 cup oil
- 1 egg
- 2 teaspoon vanilla
- 1 cup buttermilk
- 1 1/2 cups diced rhubarb
- 2 1/2 cups flour
- 1 teaspoon soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 3 tablespoons sugar
- Topping:
- 1 tablespoon butter, softened
- 1/2 teaspoon sugar
- 1 teaspoon cinnamon
Preparation
Step 1
1. Preheat oven to 400 degrees
2. Prepare topping; set aside
3. Prepare filling; set aside
4. Combine dry ingredients; toss in rhubarb, make a
well.
5. In small bowl, beat egg, milk, vanilla and oil.
6. Pour into well, stir just until moistened, 10-15
strokes.
7. Pour half the batter into lined muffin cups.
8. Divide filling on top of batter.
9. Spoon on rest of batter
10.Sprinkle topping on batter.
11.Bake for 20 minutes
