Chinese-Style Ribs with Guave BBQ Sauce
- BBQ Sauce:
- 2 Tbsp. sugar
- 1 Tbsp. kosher salt
- 1 Tbsp. dry mustard
- 1 tsp. Chinese Five-Spice powder
- 1/2 tsp. freshly ground pepper
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 5 lbs. baby back ribs
- 1/2 c. medium-dry sherry
- 8 oz. canned guava paste cut 1/2"
- 1/3 c. cider vinegar
- 1/4 c. dark rum
- 3 Tbsp. tomato paste
- 3 Tbsp. lime juice
- 1 Tbsp. soy sauce
- 1 Tbsp. Worchestershire sauce
- 1 scallion, white part only, minced
- 1 clove garlic, minced
- 1/4 c. water
Preparation time 10mins
Cooking time 11mins
Light grill, when coals covered with light gray ash, push them to opposite sides of the grill. If using a gas grill turn off center burners.
Mix sugar, salt, dry mustard, spice powder, pepper, cinnamon, and cloves. Sprinkle mixture over ribs. Pour sherry into spray bottle. Put ribs on hot grill, spray with sherry. Cover and grill for 30 minutes then spray with sherry. 1 1/2 hours (3x). Uiitl meat is tender.
Brush guava BBQ sauce over ribs, grill 1 minute.
