- 1 CUP SUGAR
- 3/4 CUP SALAD OIL
- 1 AND 1/2 CUPS SIFTED FLOUR
- 2 tsp BAKING POWDER
- 1/2 tsp SODA
- 1/4 tsp SALT
- 1 tsp CINNAMON
- 1 CUP GRATED CARROTS
- 2 EGGS
- 1/2 CUP CHOPPED NUTS

Step 1
MIX SUGAR AND OIL; ADD SIFTED DRY INGREDIENTS AND CARROTS. ADD EGGS ONE AT A TIME BEATING WELL AFTER EACH ADDITION. ADD NUTS AND BLEND WELL. TURN INTO GREASED LOAF PAN BAKE AT 350 DEGREES FOR 45-50 MIN
TO REDUCE CRACKING COVER CAKE WITH ALUMINUM FOIL FOR FIRST 10 MIN OF BAKING. YIELD 1 LOAF PAN.
