Salads - Potato Salad - Butler's Pantry

Ingredients

  • 4 lbs. New red potatoes, with good skin (not old red potatoes)
  • dried dill weed (to taste; approximately 1 tbsp.
  • Green onions (approximately 5-6, depending on size)
  • Miracle Whip or Publix Salad Dressing (will not taste the same with mayonnaise)

Preparation

Step 1

Scrub potatoes with brush; remove eyes, cuts, bruises. Cut into similar-sized pieces, but do not dice evenly. Cook in boiling water just until almost done; add salt to water and finish cooking. Drain; add dill weed, green onions (slicede thinly—green top and half of white part), and salad dressing. Mix carefully; add additional ingredients if necessary. Recipe requires a bit of tasting—additional salt may also be required.
