Slow Cooker Jambalaya

Ingredients

  • 1 cup onions, chopped
  • 1 cup green peppers, chopped
  • 1/4 cup red peppers, chopped
  • 2 cloves garlic, minced
  • 1/2 - 1 tsp. jalapeno pepper
  • 2 15oz. cans diced tomatoes (not drained)
  • 1 8oz. can tomato sauce
  • 1 13 oz. package smoked sausage or turkey sausage
  • 1/2 - 3/4 lb. shrimp, cooked
  • 1 tsp. sugar
  • 3/4 tsp. chili powder
  • 1/2 tsp. dried thyme
  • 1 TB. worcestershire sauce
  • Dashes of Hot Sauce
  • Fresh parsley, chopped
  • Salt & Pepper to taste

Preparation

Step 1

Saute sausage, onion, over medium heat until browned. Add celery, peppers and garlic for 1 minute. Add to crockpot. Add tomatoes,sauce and seasonings to crockpot.

Cook on low 5-6 hours. Add 1 tsp flour to 2 tsp of water to make slury and add to crockpot to thicken sauce as needed. Add shrimp and parsley. Heat through and serve over rice.
