Ingredients

    c. flour

  • 1 1/2

    c. sugar

  • 1/2

    tsp. salt

  • 3/4

    c. cold water

  • 1/2

    tsp. cream of tartar

  • 1/2

    c. vegetable oil

  • 1 1/2

    tsp. vanilla

  • 7

    large eggs, separated

  • 2

    tsp. grated key lime rind

  • Glaze:

  • 1

    c. powdered sugar

  • 1

    Tbsp. melted butter

  • 2-3

    tsp. key lime juice

Directions

Preheat oven to 350. Line 2 cupcake pans with paper liners. Combine flour, sugar, baking powder, and salt in large bowl. Add shortening, milk, and vanilla. Beat egg yolks in separate bowl. Add to dry mixture along with water, oil, vanilla, and rind. Mix at medium speed while scraping bowl until well blended (2 1/2 minutes). Different bowl, combine egg whites and cream of tartar. Mix at high speed 2-2 1/2 minutes or until whites stiff. Fold flour mixture into egg whites until blended. Fill liners 1/2-2/3 full. Bake 20-25 minutes. Combine powdered sugar and melted butter in small mixing bowl. Stir in key lime juice until slightly thin glaze consistency. Drizzle over cupcakes.
