Breakfast Pucks

Ingredients

  • Cooking spray
  • 6 eggs
  • skim milk
  • meat or poultry - diced
  • shredded cheese
  • green onion, chopped
  • pepper to taste

Preparation

Step 1

Preheat oven to 375F

Liberally use cooking spray on 6 cups in a muffin tin.

In a separate bowl, "beat the crap" out of the eggs and milk. (for more pucks, increase number of eggs - 1 per puck)

Sprinkle meat into each cup. Pour the egg mixture evenly into each cup. Top with shredded cheese. Sprinkle tops with green onion and pepper.

Bake for 25 minutes. Serve warm on buttered toasted English muffin halves.

These can be prepared ahead and kept in fridge or freezer for later use. To reheat, microwave on high for about a minute or until warm
