Caesar Salad

Ingredients

  • Mash together:
  • FOR DRESSING
  • 1 tsp garlic, chopped
  • 1/8 tsp kosher salt
  • Add:
  • 1/2 cup Parmesan cheese, finely grated
  • 1 tbs fresh lemon juice
  • 1 tbs mayo
  • 1 tsp anchovy paste
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp Tabasco
  • Whisk In:
  • 1/4 cup EVOO
  • Salt and Pepper to taste
  • FOR THE SALAD-
  • Fry:
  • 1/2 cup prosciutto, thinly sliced
  • 1 tsp olive oil
  • Toss Together:
  • 4 1/2 cups romaine lettuce, torn into bite size pieces
  • 2 cups mixed greens
  • 1/2 cup Parmesan, grated

Preparation

Step 1

For the dressing-
Mash garlic and salt together, place in bowl

Add Parmesan, lemon juice, mayo, anchovy paste, Dijon, Worces. And Tabasco. Stir until blended.

Whisk in oil n a slow, steady stream to form an emulsion. Season wit S&P, chill.

For the Salad-
Fry prosciutto in oil in nonstick skillet until edges start to curl; drain on paper towel-lined plate.

Toss lettuces with dressing, fried prosciutto, and parmesan cheese. Top with warm croutons.
