Vegetables - Delicious Casserole (Paige Sutcliff)

Ingredients

  • 1 package Pepperidge Farm Herb Flavored Stuffing
  • Mix
  • 1 8 oz carton sour cream
  • 1 can cream of chicken or cream of mushroom soup
  • 1 cup grated cheddar cheese
  • 1 egg
  • 2 cups grated carrots; 2 lbs. squash, eggplant or broccoli

Preparation

Step 1

Steam vegetables and carrots. Mix all ingredients with steamed vegetables except dressing mix. Prepare mix as directed. Grease pan. Cover with layer of dressing. Add vegetable mixture. Then cover with remainder of dressing mix. Add butter on top (if desired). Bake at 350 degrees for 30 minutes in 9x13x2 inch pan.
