Ingredients

  • Olive Oil

    chicken wings (severed at the joints)

  • 2

    Italian sausages (sliced)

  • 2-3

    green peppers, coarsely chopped

  • 2-3

    tomatoes, coarsely chopped

  • 1

    onion, coarsely chopped

  • 4-5

    cloves of garlic. finely chopped

  • 2-3

    sprigs of parsley, finely chopped

  • 3

    cups of chicken or beef broth

  • 2

    cups of rice

  • 1/2

    teaspoon salt

  • 1

    teaspoon pepper

Directions

Heat olive oil in a pan and cook chicken wings. Remove to a large saucepan. Cook sausage and remove to the saucepan Next cook peppers and remove; then tomatoes and remove; then onion and garlic and remove. Pour the drippings from the pan over the ingredients in the sauce pan; a salt, pepper and chopped parsley. Add broth to saucepan and bring to boil; add the rice (distributed evenly) and bring back to boil and cook until rice has absorbed most of the liquid (should still be quite moist not dry) Plate and serve as a heartly dish!
