Chicken - Heart healthy recipe for Roasted Herb Chicken

Ingredients

  • 4 – 4 oz chicken breasts, boneless, skinless
  • 1 large garlic clove, shopped fine
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh tarragon, chopped
  • 1 tablespoon fresh basil, chopped
  • 2 tablesp. Fresh chives, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1/2 cup fresh bread crumbs
  • 1/8 teasp. Black pepper, ground
  • 4 tablespoons Dijon mustard
  • Creamy Mustard Gravy
  • 1 cup reduced-sodium chicken broth
  • 1 teasp. Cornstarch
  • 4 tablespoons evaporated skim milk
  • 2 tablespoons Dijon mustard

Preparation

Step 1

Grate untoasted bread to make crumbs. Preheat the oven to 475 degrees. Combine garlic, parsley, tarragon, basil, chives, thyme, bread crumbs and pepper. Brush both sides of chicken breasts with mustard; roll in herb mixture to coat. Roast the chicken uncovered in the oven for about 15 minutes—or until internal temperature reads 165 degrees when probed with a meat thermometer. Good served with creamy mustard gravy.

Creamy Mustard Gravy:


Mix all ingredients thoroughly and bring to a simmer. Reduce until thickened. Serve with roasted herb chicken.
