Ingredients

  • 2 C hot mashed potatoes (no liquid or butter added)
  • 1 C shredded sharp cheddar cheese
  • 2 T butter or margarine
  • 2 egg yolks, beaten
  • 1/2 C milk
  • 1 t salt to taste
  • 1/8 t black pepper to taste
  • 1/8 t dry mustard
  • 2 egg whites, stiffly beaten
  • Chives

Step 1

Preheat oven to 350

Blend potatoes, cheese and butter. In separate bowl combine egg yolks, milk, salt, pepper and dry mustard. add egg mix to potato mix; beat until smooth. fold egg whites into mix and turn into well buttered casserole dish.

Bake for 40-50 mins or until golden, garnish with chives if desired.
