Portuguese Style Fish Stew

Ingredients
- 3 tbs EVOO
- 2 bay leaves
- 2 tsps smoked paprika
- 1 small onion, thinly sliced
- 1 poblano pepper, seeded & thinly sliced
- 1 14.5-oz can diced tomatoes
- 1 garlic clove, finely chopped
- 1/4 cup chopped fresh cilantro
- Kosher salt & fresh ground pepper
- 1-1/2 lbs tilapia (or similar texture fish) cut into 2" chunks

Preparation
Step 1
Heat 2 tbs oil in medium saucepan over medium high heat. Add bay leaves and paprika and cook, stirring, 30 seconds. Add the onion, pepper, tomatoes, garlic and 2 tbs cilantro; season with S&P. Cover & cook about 10 minutes.
Add 1 cup water and reduce heat to medium low. Season the fish with S&P then nestle the pieces among the vegetables in the pan. Cover and simmer until the fish is just cooked thru, about 5-7 minutes.
Serve with remaining 2 tbs cilantro.
