Cake Mix Doctor Libbie's Chocolate Amaretto Cake

Ingredients
- Vegetable spray for spraying the pan
- Flour for dusting the pan
- 1 package (18.25 oz) plain devil’s food cake mix
- 1 package(3.9 oz) chocolate instant pudding
- 3/4 cup milk
- 1/2 cup vegetable oil
- 1/2 cup water
- 1/4 cup mayonnaise
- 4 large eggs
- 1/4 cup amaretto
- 1 teaspoon almond extract
- 1 cup semi-sweet chocolate chips
- 1 tablespoon powdered sugar for garnish*
Preparation
Step 1
1. Preheat oven to 350.
2. Lightly spray dust 12-cup bundt pan, shaking out
excess flour. Set aside.
3. In a large mixing bowl, combine the cake mix,
pudding, milk, oil, water, eggs, mayonnaise,
amaretto almond extract.
4. Blend with an electric mixer on low speed for 1
minute.
5. Scrape the sides of the bowl, increase speed to
medium beat 2 minutes.
6. Scrape the bowl again. Batter should look thick well
combined.
7. Fold in the chocolate chips, making sure they are
well mixed thoroughly.
8. Pour into bundt pan, smoothing it out with a spatula.
9. Bake 53-56 min until cake springs back when lightly
pressed with your finger is just starting to pull away
from the sides.
10.When done, put on a wire rack to cool for 20 min.
Run a long knife around the edge of the cake invert
onto a rack to cool completely.
11.Place the cake on a serving platter.
12.Dust with powdered sugar
* Or make a glaze:
1/2 cup powdered sugar
4 tablespoons amaretto
