Spinach ala Strawberry

Ingredients

• 1 Pint Strawberries,
• 3 Tbsp Rice Vinegar,
• 1 Tbsp Olive Oil,
• 1 Tsp Minced Tarragon,
• 1 Tbsp Snipped Chives,
• 1 Tsp Lemon Juice,
• 1 Clove Minced Garlic,
• 1/4 C Water,
• Salt & Pepper to taste,
• 8 C. torn Spinach Leaves,
• 4 Thin Slices Red Onion,
• 4 Kiwi Fruit, peeled and sliced,
• 1/4 C. queso fresco

Preparation

Step 1

Puree the strawberries with a pulsing motion in a food processor until smooth. Stir in the rice vinegar, olive oil, tarragon, chives, lemon juice, garlic, water, salt and pepper.

Divide the spinach, red onion, and kiwi among 4 chilled serving plates. Sprinkle the salads with queso fresco. Serve with the strawberry dressing.
