Ingredients
- 1 Pint Strawberries,
- 3 Tbsp Rice Vinegar,
- 1 Tbsp Olive Oil,
- 1 Tsp Minced Tarragon,
- 1 Tbsp Snipped Chives,
- 1 Tsp Lemon Juice,
- 1 Clove Minced Garlic,
- 1/4 C Water,
- Salt & Pepper to taste,
- 8 C. torn Spinach Leaves,
- 4 Thin Slices Red Onion,
- 4 Kiwi Fruit, peeled and sliced,
- 1/4 C. queso fresco
Preparation
Step 1
Puree the strawberries with a pulsing motion in a food processor until smooth. Stir in the rice vinegar, olive oil, tarragon, chives, lemon juice, garlic, water, salt and pepper.
Divide the spinach, red onion, and kiwi among 4 chilled serving plates. Sprinkle the salads with queso fresco. Serve with the strawberry dressing.
