  • 6 cloves garlic
  • 1 cup parsley
  • 1 teasp grated lemon zest
  • 1 6-7 lb roasting chicken
  • salt and pepper to taste

Step 1

1)preheat oven to 400. Coat a roasting pan with cooking spray. Mince the garlic and parsley, either by hand or in food processer. Combine with the lemon zest.
2) Without removing it, lift the skin away from chicken just enough to spread the parsley mixture all over the meat. Sprinkle the exterior with salt and pepper to taste
3) Roast bird for about 1 hour and 40 min, or until a meat therm inserted in thigh reads 175. Remove from oven and let stand at least 5 min before carving
