Corn Muffins

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 14.75 oz cream style corn
  • 1/2 cup buttermilk
  • 1 egg
  • 2 tablespoons butter, melted
  • 4 oz can diced green chilies

Preparation

Step 1

Preheat oven to 375.
Spray 12 cup muffin pan.
In large bowl, mix flour, cornmeal, sugar, baking powder, soda and salt.
In medium bowl, whisk corn, buttermilk, egg, butter and chilies.
Add to flour mixture; stir just until moistened.
Put in muffin cups.
Bake 20 minutes or till tests clean.
Remove and cool slightly on wire rack
