  • 1 cup water
  • 1/2 cup butter
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 4 eggs
  • 8 drops liquid red pepper seasoning
  • 1 cup shredded sharp cheddar
  • Grated Parmesan
  • 1/2 cup grated parmesan cheese

Step 1

Heat water and butter to a full boil in a large saucepan.
Add flour mixed with salt and dry mustard all at once. Stir virorously with wooden spoon until mixture forms a thick, smooth ball that leaves the sides clean.
Remove from heat and cool slightly.
Add eggs one at a time, beating well.
Stir in pepper seasoning and cheese.
Fill a pastry bag, fitted with a notched tip. Press out into small puffs, about a rounded teasoonful each, onto a greased cookie sheet (or spoon on).
Sprinkle tops with parmesan cheese.
Bake at 400 degrees for 25 minutes or until golden brown. Remove to wire rack.
