Baked Macaroni and Cheese

Ingredients

  • 1 1/2 cups uncooked elbow macaroni
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/4 cup milk
  • 1 cup half-and-half
  • 1/4 tsp paprika
  • 1/2 tsp pepper
  • 2 1/2 cups shredded cheddar cheese
  • salt

Preparation

Step 1

1. Preheat oven to 350°

2. Cook macaroni in boiling salted water according to package directions; drain well and set aside.

3. Melt butter in a meduim saucepan over low heat. Blend flour, stirring constantly, until smooth and bubbly.

4. Gradually stir in mild and half-and-half. Cook, stirring constantly, until mixture boils and thickens, about 2 to 3 minutes.

5. Remove from heat and add paprika, pepper, and 2 cups of the cheese; stir until cheese is melted and sauce is smooth.

6. Combine sauce with the macaroni and add salt to taste. Place in buttered 1 1/2-quart casserole dish. Garnish top with remaining 1/2 cup of cheese and dot with additional butter.

7. Bake 25 to 30 minutes.
